We chose Carmel-by-the-Sea as our wedding location because of fond memories of the Monterey Bay area and the magnificent scenery. The ceremony took place on a cliff overlooking the vast Pacific Ocean on an absolutely perfect 70 degree day. We stayed at the Hyatt Carmel Highlands Inn for 3 nights. The night of the ceremony we enjoyed dinner at the Pacific's Edge Restaurant located in the Hyatt at a table with a perfect view of the Carmel cliffs, Pacific Ocean, and a breath-taking sunset.
The following day we enjoyed a day of shopping, wine tasting, walking on the beach, swimming and soaking, and topped it all off with the most brilliant and amazing dinner at Aubergine Restaurant at L'Auberge in Carmel. Executive Chef Justin Cogley and pastry chef extraordinaire, Ron Mendoza, along with the incredible and gracious staff and sommelier created an unbelievably perfect and well-balanced meal. Some highlights included the opening glass of Cava, the oysters, sea urchin, suckling pig, pinot noir, truffles, and who could forget ending the evening with an introduction to the chef himself in the kitchen. Wow. Let's just say we cannot wait to spend many, many future anniversaries in Carmel.
